White borscht: an interesting variant of an authentic Ukrainian dish
Borsch is an authentic Ukrainian dish that is prepared in completely different ways in each region of the country. The most popular, of course, are the classic red and green borscht. But there is also white borsch, the recipe for which can be found below.
The recipe was shared by a food blogger named recepti_dariko. On Instagram, she said that this borscht can be served both hot and cold.
Ingredients
- Kraków sausage - 500 gr
- leek - 1 pc
- potatoes - 5-6 pcs
- garlic - 4 cloves
- butter - 2 tbsp
- 10-15% cream - 300 ml
- flour - 3 tbsp
- boiled eggs for serving
- broth or water - 2.5 liters
- bay leaf
- allspice
- marjoram
- Mediterranean spices
- horseradish root - 3-4 cm
- fresh herbs
Method of preparation
1. Cut onion into rings, chop garlic, and cut potatoes into cubes.
2. Fry the onion for in a saucepan in butter a few minutes. Add the garlic and potatoes in a minute.
3. Fry on low heat for a few minutes. Pour broth or water.
4. Add spices, salt, bay leaf and pepper.
5. Cook under the lid for 15-20 minutes after boiling. Remove the bay leaf and pepper and beat the soup with a blender.
6. Cut sausage into strips and fry in a dry frying pan for a few minutes.
7. Mix cream with flour and pour into the soup. Add the sausage. Heat the soup over low heat for 5 minutes.
8. Serve white borscht with fresh herbs, finely grated horseradish and a boiled egg.
