Olivier salad is a versatile dish that can be eaten on any day, not necessarily a holiday. It is hearty, and tasty, and can even be healthy if you replace mayonnaise with another healthy sauce or make homemade mayonnaise. It's better to bake vegetables for the salad rather than boil them, and add fresh peas and boiled tongue, meat, or seafood instead of unhealthy sausage.
Food blogger Olena Yermolenko shared a recipe on Instagram for a delicious olivier with shrimp and green onions, which will be much easier on the body than a classic sausage salad.
Ingredients:
- small shrimps - 300 g
- chicken fillet - 300 g
- carrots - 2 pcs.
- potatoes - 3 pcs.
- homemade mayonnaise - to taste
- eggs - 5 pcs.
- green peas can be canned or fresh - 100 g
- salted or fresh cucumbers - 2 pcs.
- green onions - 100 g
- salt, pepper - to taste
Method of preparation:
1. Wash the vegetables and bake in the oven until tender.
2. Peel and dice the potatoes.
3. Boil and chop the eggs.
4. The fillets can be baked and diced.
5. Scald the shrimp with boiling water and chop.
6. Chop the onion.
7. Make homemade mayonnaise.
8. Combine all ingredients in a large bowl and mix well.
9. Season with salt and pepper to taste.
10. Put the salad in the refrigerator for a few hours so that it is well set and ready to eat.
