What to marinate meat and fish in: top 7 universal marinades
Barbecue season is in full swing. The most popular foods that are most often grilled are meat and fish. And most of all, the taste of such dishes depends on the chosen marinade.

The marinades are designed for 1-1.2 kg of meat/fish. The proportions are approximate.
Yogurt and ginger
Best for poultry.
Ingredients:
- thick yogurt – 200-250 g
- curry – 1-2 tsp
- salt
- lemon zest – 1 tbsp
- ginger – 1 tsp
Marinate for 2-3 hours.
Italian
Suitable for any white meat and fish.
- olive oil – 2 tbsp
- white wine – 5 tbsp
- lemon juice – 1 tbsp
- Italian herbs – 1 tbsp
- a mixture of peppers – 1 tsp
- salt – 2 tsp
Marinate for 3-5 hours.
Spicy and sweet
Ingredients:
Great for fish and chicken.
Ingredients:
- soy sauce – 4 tbsp
- honey – 1 tbsp
- grated ginger – 1 tsp
- chili pepper
- balsamic vinegar
Marinate for 2-3 hours.
Sweet and sour
Ingredients:
- olive oil – 3 tbsp
- mustard – 1 tbsp
- lemon juice – 1 tbsp
- liquid honey – 1 tsp
Marinate for 3-5 hours.
With red wine
- olive oil – 2 tbsp
- soy sauce
- dry red wine
- salt – 2 tsp
- pepper – 1 tsp
- dried garlic – 0.5-1 tsp
Marinate for 3-5 hours.
Sour cream
Ingredients:
- sour cream – 150 g
- zest of 1 lemon
- garlic – 4 cloves
- Italian herbs – 10 g
- fresh herbs – 40 g
- salt – 1 tsp
Marinate for 3 hours.
Mustard
Ingredients:
- mustard seeds – 3 tbsp
- olive oil – 2 tbsp
- soy sauce – 2 tbsp
- garlic – 2 cloves
- sea salt
Marinate for at least 2 hours.
