What to make healthy pancakes with: no need to add eggs

Sweet potato is a root vegetable. This product is extremely nutritious and is suitable for preparing many sweet and savory dishes. And even delicious pancakes. The batter does not require eggs, so the dish will be as healthy as possible.

The idea of making sweet potato pancakes was published on the Instagram page of food blogger Inna (inna_levenets). According to this technology, flax seeds are added to the batter instead of eggs.

Ingredients:

  • 200 g wheat flour
  • 1 tbsp of baking powder
  • 1/2 tsp salt
  • 1 tsp of cinnamon
  • 2 tbsp of brown sugar
  • 1 tbsp. spoon of flax seeds ground into flour + 6 tbsp. spoons of water
  • 2 tbsp. tablespoons of oil
  • 1 tbsp. spoon of lemon juice
  • 85 g of mashed boiled or baked sweet potatoes
  • 300 ml of vegetable milk

Method of preparation:

1. Mix the dry ingredients: flour, baking powder, sugar, salt, and cinnamon.

2. Cover flax seeds with water, stir, and let stand for 15 minutes.

3. Mix milk, oil, lemon juice, flax seeds, and sweet potato.

4. Add the wet ingredients to the dry ones and mix until smooth.

5. Heat a pan, add a little oil, spoon the batter with a ladle, and fry for one and a half to two minutes on each side.

6. Pour caramel syrup or your favorite jam over the finished pancakes.
