What to cook with rice instead of pilaf: an idea for a delicate crumbly risotto

If you want to diversify your everyday menu, instead of the usual pilaf, you should make risotto. The dish is prepared based on broth, from a special kind of rice that you can find in a regular supermarket. And if you add butter and Parmesan, the texture is extremely tender and juicy. In addition, this dish is also more budget-friendly, because you don't need to add meat.
The idea of cooking crumbly rice risotto was published on the Instagram page of the famous Ukrainian chef Valerii Ponomar (ponomar_valeriy).

Ingredients:
- Carnaroli rice – 250 g
- olive oil – 2 tbsp
- onion – 1/2 pc
- garlic – 1 clove
- broth (as it evaporates)
- butter – 20 g
- Parmesan cheese – 50-60 g

Method of preparation:
1. Fry the rice in olive oil until the color of a raw oyster – then it will emulsify with the broth.

2. When adding the broth, it should be boiling, so keep it on low heat in a saucepan.
3. Choose the broth based on the ingredients you plan to add (meat, fish or vegetable).

4. Cook over low heat for 20 minutes, stirring constantly and adding broth as it evaporates.
5. After 18 minutes, add the butter and finely grated Parmesan cheese.

6. The rice should be dense inside and slightly hard (al dente).
