Recipe for hodgepodge with smoked meats

Ingredients:

  • Any meat - 450 g
  • Ham, sausage - 300 g
  • Lemon - 1 pc.
  • Garlic - 2-4 cloves.
  • Onions - 2 pcs.
  • Pickled cucumbers - 2-4 pcs.
  • Olives - 10 pcs.
  • Any greens - 1 bunch
  • Tomato paste - 1 tbsp. l
  • Sour cream - 2-3 tbsp.
  • Salt, pepper - to taste
  • Bay leaf - 1-2 pcs.

Method of preparation:

  1. Wash the meat, cut it into medium pieces, put it in a saucepan, cover with water, add a whole onion, and cook until it boils.
  2. When the meat is cooked in the broth, chop the ham and sausage and add to the pot, stir.
  3. Chop pickles and olives and add to the broth, bring to a boil.
  4. Chop the onion with the garlic and fry in vegetable oil, add the tomato paste, salt, pepper and cook for about 10 minutes.
  5. Add the finished roast to the broth, stir and cook for another 5-10 minutes.
  6. Let the dish stand, and add sour cream and lemon to the plates before serving.

2. Pancakes

This dish has a fascinating history - the recipe for potato pancakes was first published in 1830 by a Polish-born chef named Jan Szitler. It is believed that this particular cooking method and ingredients laid the foundation for the modern recipe for pancakes. It is known that Schitler borrowed and slightly improved the recipe of German potato pancakes.

Ukrainians prepare this dish very often, especially during the season of young potatoes, and season it with sour cream and herbs.

Recipe for potato pancakes

Ingredients:

  • potatoes - 1 kg
  • eggs - 1-2 pcs.
  • flour - 3 tbsp
  • salt, pepper - to taste
  • garlic - 2 cloves.
  • onion - 1 pc.
  • oil - 2-3 tbsp. l.

Method of preparation:

  1. Wash and peel the potatoes, grate on a coarse grater.
  2. Add eggs, salt, flour, pepper, grated onion and garlic, and mix.
  3. Heat a frying pan, pour in vegetable oil, spoon in the pancakes and fry until golden brown on both sides.
  4. Serve the dish hot, with sour cream and herbs.

  • 3 cups of flour

  • 2 tbsp of sunflower oil
  • 3 cloves of garlic
  • 50 ml of cold water
  • 50 g of dill

Method of preparation:

  1. Sift the flour well so that it is saturated with oxygen.
  2. In a bowl, mix the oil, sugar, salt, yeast, and flour and knead the dough.
  3. Roll it into small balls.
  4. Put them in a greased baking dish at a distance of about 1 cm from each other and place in a warm place for about 5-10 minutes.
  5. Filling: grate the garlic, add oil, salt, chopped dill, and mix thoroughly.
  6. Put the donuts in the oven to bake for 15 minutes at 180 C.
  7. Take them out and brush with the garlic dressing.
