Instead of hot borscht and soups in the summer, it is better to cook cool okroshka. It is very refreshing, and you will feel light after eating it. You just need to choose the right base for this dish, as well as the meat.

The idea of cooking okroshka with sour cream, baked potatoes and chicken thigh is published on the Instgaram page of food blogger Valentyna Saenko. The dish is very light.

Ingredients:

  • potatoes - 400 g
  • fresh cucumber - 3-4 pcs.
  • radish - 5 pcs.
  • eggs - 5 pcs.
  • thigh fillet - 500 g
  • onion
  • sour cream - 100 g
  • American mustard - 40 g
  • horseradish - 10 g
  • salt, pepper, a pinch of sugar (optional)
  • herbs
  • sparkling water (very cold) - 0.5 liters.

Method of preparation:

1. Bake the potatoes. Yes, it takes longer than just boiling, but it is better to bake it for all salads and okroshka. This way it will not be watery. Wash, brush with vegetable oil, and sprinkle with salt.

2. Then wrap in foil and bake for at least an hour, depending on the size of the potatoes.

3. During this time, prepare the vegetables, boil the eggs, and fry the meat.

4. Hard-boil the eggs. 8-10 minutes from boiling.

5. Separate the egg yolk from the white and dice the white. Chop the cucumber, baked potatoes and onions in the same way.

6. Fry the chicken and dice it as well.

7. Mix the yolks with sour cream, mustard, horseradish, salt, pepper and beat with a blender until smooth.

8. Just before serving, pour sparkling water over the sour cream mixture.
