What is qutab and how to cook it: recipe for juicy filling
Qutab is a dish of Azerbaijani cuisine. It is based on unleavened dough and any filling: meat, greens, cheese, onions, potatoes, cabbag. It looks similar to traditional cheburek and is fried in a pan in the same way, the only difference being that they are not fried with oil.

Dough:
- water - 200 ml
- salt - 1 tsp.
- oil - 2 tbsp
- flour - 350 g
Filling:
- cottage cheese - 450 g
- greens: dill, parsley - 1/2 bunch each
- salt, pepper
Additionally:
- butter (for greasing)
Method of preparation:
1. First, prepare the dough. To do this, dissolve salt in water and add oil. Mix well.
2. Gradually add flour and knead the elastic dough. It will be slightly sticky to your hands. Cover the dough and leave it for 15 minutes.
3. Meanwhile, prepare the filling. Mash the cottage cheese with a fork, then add salt, pepper and chopped herbs. Mix until smooth.
4. Divide the dough into 8 equal parts, and form balls from each. Roll out each ball thinly in the shape of a circle.
5. Put the filling on one half, cover with the other half of the dough and pinch the sides.
6. Fry in a dry pan over medium heat until golden brown.
7. Grease the finished flatbreads with butter.
