Arancini is a hearty and delicious Sicilian dish based on rice. To make the dish more satisfying, the rice balls should be stuffed with minced meat and fried vegetables. But if you don't eat meat, you can replace it with mozzarella, tomato sauce, and green peas.
The cook shared on Instagram a recipe for a delicious and satisfying arancini dish, which will be a great dish for lunch and dinner.
Ingredients:
- 250 g of rice
- 250 g of minced meat
- 4 eggs
- 1 onion
- 2-3 cloves of garlic
- 2-3 tbsp of tomato sauce
- 100 g of hard cheese
- 100 g of breadcrumbs
- 100 g of flour
- saffron, salt, pepper
- herbs at will
Method of preparation:
1. Boil the rice. For a glass of rice, add 2 cups of water. Be sure to add salt and saffron.
2. Chop and fry the onion and garlic, add the minced meat and tomato sauce. Add salt and pepper and simmer until the liquid evaporates.
3. Add grated cheese, and 2 eggs to the cooked hot rice and mix well. Let it cool down.
4. Then form balls, put the meat filling inside, and roll in flour, beaten eggs, and breadcrumbs.
5. Fry in plenty of oil.
