Kosher foods that Jews eat
Sukkot is one of the biggest holidays of the Jewish people, which falls on September 21-28. Both on weekdays and holidays, Jews observe kashrut, the rules for eating food. Kosher is the food that Jews are allowed to eat according to Jewish beliefs. An animal becomes kosher only when it is killed by a special person and in a special way, without suffering. Forbidden food is called trafna.

The most common kosher food
Fruits, vegetables, and honey are kosher foods
- Meat is eaten, but only from cloven-hoofed mammals: cows, sheep, goats.

Ingredients:
- Eggplant
- Concentrated tahini (sesame seed paste)
- Cold water
- Lemon
- Salt
- Pepper
- Cilantro
Method of preparation:
- Slice the eggplant, wrap it in foil, and put it on a small fire. Turn it over while baking.
- Prepare the tahini: dilute it with water and lemon juice, and add salt. You should get the consistency of liquid sour cream. Finely chop the cilantro and add half of it to the tahini.
- Remove the eggplant from the heat when it is completely soft. Peel it, and finely chop it with a knife, salt, and pepper.
- Put it on a plate, leaving an empty space for the tahini in the middle. Pour in the tahini and garnish with cilantro.
- Serve on a festive or even a weekday table with a warm drink.
