What dessert to make with early strawberries: very easy and no baking required

Delicious early strawberries have already begun to appear in markets and shops. You can simply eat them fresh or make desserts. If you choose the second option, use the following technology. You don't even have to bake anything.

The idea of making a mousse dessert with strawberries and kiwi was published on the Instagram page of food blogger Natalia with the nickname smak_nata. The mass is very tender and airy.

Ingredients for the mousse layer:

  • cream 33% - 150 g
  • mascarpone - 250 g
  • sour cream 20% - 250 g
  • sugar - 100 g or to taste
  • vanillin
  • gelatin - 21 g
  • water for gelatin - 105 g

Ingredients for the strawberry layer:

  • strawberries - 250 g
  • sugar - 25 g
  • lemon - juice 5 g
  • zest of 1/2 lemon
  • gelatin - 7 g
  • water for gelatin - 35 g

Ingredients for the lemon drink:

  • sugar - 15 g
  • lemon juice - 10 g
  • zest of 1/2 lemon
  • mint at will
  • boiling water - 130 g

Ingredients for the lemon layer:

  • lemon drink - 100 g
  • gelatin - 4 g
  • water for gelatin - 20 g
  • kiwi for decoration - 3 pcs.

Method of preparation:

1. Cover the bottom of the mold with cling film.

2. Put the acetate film inside.

3. Pour cold water over the gelatin and leave for 15 minutes or cook according to the instructions.

4. For the mousse layer, whip the cold cream to the consistency of melted ice cream.

5. Combine mascarpone, sour cream, sugar, and vanilla.

6. Dissolve gelatin and pour into the mass. Mix.

7. Add cream and combine.

8. Pour half of the mousse (430 g) into the mold and refrigerate.

9. Leave the rest at room temperature.

10. Add sugar and lemon juice to the strawberries cut into pieces.

11. Cook for 4 minutes, add zest and beat with a blender in half a minute. The mass of strawberry puree is 250 g.

12. Pout cold water over gelatin.

13. After 15 minutes, pour into the strawberries and mix.

14. Pour over the mousse and refrigerate.

15. In a water bath, bring the mousse to a homogeneous flowing consistency, stirring constantly with a whisk. It is important not to overheat. The mousse will not even have time to heat up. Pour over the strawberry layer and refrigerate.
