What delicious pastries to make with blueberries: very fluffy dough and snow-white icing on top

Blueberries are ideal for flavorful, flaky pastries. This juicy berry goes well with sponge cake dough and adds a pleasant refreshing sourness. The snow-white icing on top looks very attractive.

The idea of making a blueberry muffin was published on the Instagram page of food blogger Valentyna Saenko. It's perfect for a family tea party.

Ingredients:

  • soft butter - 170 g
  • sugar - 220 g
  • zest of 1 lemon
  • eggs - 4 pcs.
  • vanilla
  • flour - 250 + for dusting berries and molds
  • baking powder - 1 tsp.
  • a pinch of salt
  • juice of 1 lemon
  • sour cream or cream or Greek yogurt - 80 g
  • berries - 200 g + 150 for decoration
  • white chocolate - 300 g
  • heavy cream in the glaze - 40 g

Method of preparation:

1. Beat soft butter well with sugar and zest until white.

2. Add the eggs one at a time, whisking well each time.

3. Then add flour, salt and baking powder. Mix until smooth.

4. Next, add the juice, mix, and add the yogurt. Mix again.

5. Lastly, add the berries, sprinkled with flour.

6. Mix and put into a mold greased with butter and sprinkled with a spoonful of flour.

7. Bake at 180 degrees, check with a skewer after 40 minutes.

8. Let the cake cool completely. The first 15-20 minutes in the mold, then without it.

9. For the glaze, add a spoonful of water to 50 grams of berries and mash the berries a little.

10. Cook.

11. Melt the chocolate with the cream in a water bath.

12. Pour the icing over the cooled cupcake.

13. Before the icing hardens, make dots of juice on it and draw randomly with a knife or toothpick.
