The eggplant season continues. The best dish you can make with this vegetable is a fresh salad. You can combine a variety of spices, lots of carrots, onions, and peppers in this dish. It tastes delicious when dressed with balsamic vinegar.

The idea of preparing a delicious eggplant salad was published on the Instagram page of food blogger Svitlana Levytska (lanas diet). Eat 30 minutes after cooking to allow the ingredients to marinate.

Ingredients:

  • small eggplants - 4 pcs.
  • onions - 2 pcs.
  • carrots - 2 pcs.
  • bell pepper - 2 pcs.

Method of preparation:

1. Bake the eggplant in slices, sprinkling with oil at 200 degrees for 20 minutes.

2. Cut the carrots into strips or grate them.

3. Sauté the onion until transparent.

4. Add the carrots and simmer under the lid until softened.

5. Add the pepper and simmer for another 7-10 minutes, uncovered, over high heat, stirring constantly to remove excess moisture.

6. Mix the stewed vegetables and eggplant.

7. Add the remaining ingredients:

  • chopped parsley
  • crushed garlic - 2-3 cloves
  • salt, pepper, ground coriander
  • balsamic vinegar - 2-3 tbsp.

8. Stir and let stand for at least 30 minutes.
