Useful beet salad with a tasty dressing: ready in 10 minutes

Beetroot is a healthy, tasty and very easy-to-cook vegetable that can be the basis not only for borscht but also for salads. Beets are also often added to canned tomatoes to make borscht for the winter.

Cook Victoria (cook_with_me_at_home) shared a recipe for a delicious and healthy beet salad with spicy sauce on Instagram.

Recipe

Ingredients:

  • beets - 2 pcs.
Baked beet
  • arugula - a bunch
  • orange - 1 pc.
Cheese for the dish
  • cheese/goat cheese - 200 g
  • nuts - 30 g

Dressing:

  • balsamic vinegar - 2 tbsp.
  • mustard - 1 tsp.
How to make beet salad
  • olive oil - 5 tbsp
  • honey - 1 tbsp.

Method of preparation:

1. Boil, bake or buy ready beets. Cut into rough pieces.

2. For the dressing, mix vinegar, mustard, oil and honey until smooth.

3. Peel orange and cut it into slices.

4. Wash arugula.

5. Assemble the salad: put the arugula in a bowl, top with the beets, then the orange, and drizzle with the dressing. Grate the cheese on top and sprinkle with nuts.
