Universal borscht dressings for any occasion
Borscht is a real art. It is a dish that is often cooked in Ukraine and even abroad. There are a lot of cooking options. Even if you use the same ingredients, the taste is different. However, to prepare this dish, you need to do a lot: peel beets, prepare a large amount of vegetables, cook meat, etc. Many housewives use ready-made dressing in their borscht to save time and still make a really tasty dish.
Today the FoodOboz editorial team is sharing a selection of versatile borscht dressings that are easy to prepare and can be stored for a long time.
Vegetable-based
Ingredients:
- tomato juice - 5 liters
- carrots - 1 kg
- onions - 1 kg
- red pepper - 1 kg
- refined vegetable oil - 0.5
- parsley - a bunch
- salt - to taste
Method of preparation:
- Make tomatojuice: beat them with a blender or pass through a meat grinder and boil for 15 minutes.
- Add carrots and cook for 15 minutes.
- Add onions and for 15 minutes.
- Add pepper and cook for 10 minutes.
- Add oil and parsley and cook for 5 minutes.
- Put in sterilized jars and close with lids.
It is better to use 0.5-liter jars because this is the volume for one borscht. This amount of ingredients makes 6 liters of dressing.
Beet
Ingredients:
- onion - 1 kg
- carrots - 1 kg
- beetroot - 3 kg
- tomato paste - 300 g
- salt - 3 tbsp
- sugar - 2 tbsp
- 9% vinegar - 3 tbsp
- oil
Method of preparation:
- Finely chop the onion and grate the carrots and beets on a medium grater.
- Fry the onion in vegetable oil.
- Fry the carrots and beets separately. Put everything in a saucepan, add tomato paste, salt, sugar and 1-2 cups of water. Cook on low heat for 1 hour, stirring constantly. Add the vinegar 5 minutes before it is ready.
- Put the dressing into sterilized jars and close with lids. Turn the jars over and cover with a blanket to cool.
This volume of products makes 4 liters of dressing.
Without boiling or sterilization
Ingredients:
- carrots -1 kg
- onions - 1 kg
- tomatoes - 1 kg
- bell pepper - 300-400 g
- parsley and dill - a bunch
- salt - 700 g
Method of preparation:
- Wash vegetables and herbs thoroughly.
- Clean the peppers. Finely chop the herbs (dill and parsley). Grate the carrots. Cut tomatoes, onions and peppers into small cubes.
- Mix everything and add salt. Put into clean jars and close with lids. Store in the refrigerator.
