Universal borscht dressing: stored for winter

Borscht dressing is a great all-purpose preparation that you can use all winter long. You won't need to peel and chop a large amount of vegetables every time as you can just add a few spoons of the ready-made dressing. This will save you a lot of time, and the taste will pleasantly surprise you.

The idea of preparing a delicious borscht dressing was published on the Instagram page of food blogger Halyna with the nickname reeixit.

Ingredients:

  • beets - 4 kg
  • carrots - 1 kg
  • onion - 1 kg
  • red bell pepper - 1 kg
  • vegetable oil - 300 ml

Seasonings (add after you start stewing the beets and vegetables):

  • vinegar - 2 tbsp.
  • sugar - 2 tbsp
  • salt - 1 tbsp
  • pepper (can be without) - 0.5 tsp.
  • coriander - 1 tsp
  • sweet paprika- 1 tbsp
  • garlic - 2 medium heads

Method of preparation:

1. Cook the beetroot until tender.

2. Peel all the vegetables, finely chop the onion, and grate the carrots. Pass the bell pepper through a meat grinder.

3. Fry the onion in oil for a few minutes and then add the grated carrots. Stew together for about 15 minutes.

4. Add chopped bell pepper.

5. Stir thoroughly and simmer for 30-40 minutes until the vegetables are fully cooked. The stewing time depends on how finely you chop the onion and how finely you grate the carrots.

6. Then add the grated beets.

7. Immediately after adding the beets, pour in vinegar, add all the spices and squeeze the garlic.

8. Mix well and put on low heat for 45 minutes.

9. Stir occasionally.

10. Put the hot dressing in jars and close them.
