Ukrainian-style pickled zucchini for the winter: a recipe for an appetizer with vinegar and garlic
Zucchini for the winter can be prepared with vegetables, spices, onions, and garlic. For a more savory version, add ketchup, mustard, and chili peppers to the vegetables. It will also be delicious with mushrooms, cucumbers, and squash.

Ingredients:
- zucchini - 2 kg
- parsley - a bunch
- garlic - 200 g
- oil - 500 ml
- salt - 100 g
- vinegar 9% - 2 tbsp. l.
Method of preparation:
1. Cut the zucchini into slices, salt and fry on both sides.
2. Finely chop the parsley. Grate the garlic.
3. Put the parsley on the bottom of the sterile jars, pour in the vinegar, add the garlic, put the fried zucchini on top, pour in the oil and put the jars, covered with lids, in a pot of water to sterilize.
4. Afterwards, preserve and turn the jars upside down.
