  • Instead of regular flour, you can use cornstarch. The proportions with water remain the same.
  • It is important to cook the custard until it begins to bubble. After that, you need to cook it for another 1-2 minutes. This is to ensure that the cream holds its shape in the confectionery and does not "fall apart".
  • During the cooking process, do not forget to constantly stir the custard. It may sound too simple, but it is necessary for the egg yolks to react with the other ingredients. This determines how airy the custard will be.

Ingredients:

  • Eggs - 2 pcs.
  • Sugar - 100 g
  • Flour - 4 tbsp
  • Starch - 2 tbsp
  • Milk - 800 ml
  • Butter - 80 g

Method of preparation:

  1. Beat eggs with sugar in a saucepan until foamy.
  2. Add flour and mix until there are no lumps.
  3. Pour in the starch.
  4. Gradually pour in the milk at room temperature.
  5. Put the saucepan on medium heat and stir constantly.
  6. As soon as bubbles begin to form, turn off the heat and add the butter.
  7. Transfer the cream to a cold container and let it cool.
