Transcarpathian-style Rakott Krumpli casserole: where the dish originated and how to cook it

Rakott Krumpli is a traditional Transcarpathian dish with Hungarian roots. Simply put, it's a potato casserole with eggs, onions, and a sour cream-based filling. The main ingredient of the dish is piknytsya, or homemade sausage, which can also be replaced with ham. All the ingredients of the casserole are laid out in layers, so a wide baking dish with high sides is best for cooking.

Ingredients:

  • potatoes - 600-700 g
  • eggs - 6 pcs.
  • ham - 150 g (or homemade sausage)
  • onion - 1 pc.
  • 20% sour cream - 400 g
  • hard cheese - 150 g
  • sweet paprika - 1-2 tsp.
  • salt, pepper

Method of preparation:

1. Boil the potatoes with the skin, then peel and cut into 0.5-centimeter-thick slices.

2. Boil the eggs and cut them into slices.

3. Peel the onion and cut it into 0.5-centimeter thick slices. Fry until light golden brown.

4. Chop the ham randomly and grate the cheese.

5. When the main ingredients are prepared, make the filling. To do this, mix sour cream, paprika, salt and pepper.

6. Grease a baking dish with butter and put the casserole as follows: potatoes, eggs, onions, ham, potatoes, salt and pepper, eggs.
