Transcarpathian potato pancake with mushrooms and cheese: a recipe for a hearty lunch dish
Potato pancakes are a very satisfying and tasty potato dish that every housewife knows how to make. To prevent them from turning gray, add onions, and to make them tender and soft, don't add too much flour.

Ingredients:
- Potatoes - 1 kg
- Eggs - 3 pcs.
- Onions - 1 pc.
- Flour - 1 tbsp
- Salt, pepper - to taste
Filling:
- Mushrooms - 400 g
- Onion - 1 pc.
- Cheese - 200 g
- Sour cream - 250 g
Method of preparation:
1. Fry the chopped onion and sliced mushrooms in a little oil, then add sour cream, salt, pepper and simmer for 5 minutes.
2. Grate the potatoes on a medium grater, add the onion, eggs, flour, salt, pepper and mix well.
3. Put the potato mixture in a frying pan and fry in a little oil on both sides. Put the mushrooms with sour cream on top of the prepared pancake, sprinkle with cheese, cover and fry until the cheese melts.
