It is important to know what you absolutely must not do when preparing this dish:

Stuffing

Cream

Be sure to try adding them to the meat, at least 100 grams. They will add tenderness and softness to the cutlets.

Onions and bread

We are used to using fresh, soft bread for the minced meat. But you should do the opposite - take dried, yesterday's bread, because soft and fresh bread gives the meat a noticeable sourness.

As for the onion, it should be diced and fried a little in vegetable oil, and then sent to a meat grinder and scrolled with the meat. This will give the minced meat an additional very pleasant flavor nuance.

Crushed ice

Yes, this is what you need to add to the finished meat. This is a real-life hack to make patties fluffy.

For 500 grams of minced meat, take 5-6 standard ice cubes, put them in a plastic bag and quickly crush them with a kitchen hammer to a fraction of 2-3 mm.

Take a bowl of minced meat out of the freezer, add the crushed ice, mix everything up, and quickly form the patties.

Pieces of ice in the minced meat begin to melt during frying, and small voids form in it, which are filled with steam and make the cutlet more fluffy and juicy.

How to fry properly

The main thing is to put the cutlets in a pre-heated frying pan with oil, fry over high heat until golden brown, and then send them to the oven to stew for 15 minutes at 180 C.

Ingredients:

  • Beef flesh – 300 g
  • Pork – 300 g
  • Chicken flesh – 300 g
  • Eggs - 1-2 pcs.
  • White bread (yesterday's) – 150 g
  • Milk – 150 g
  • Butter – 100 g
  • Flour or breadcrumbs – 100-200 g
  • Fried onions – 180 g
  • Garlic – 1-2 cloves if desired.
  • Cream – 100 g
  • Water – 1 glass
  • Salt and pepper – to taste
  • Bay leaf – 1-2 pcs.

Method of preparation:

  1. Make minced meat, add white bread soaked in milk, eggs, salt, and pepper.
  2. Fry the onion separately and add to the minced meat, mix well, also, you can add garlic.
  3. Form the patties and roll them in breadcrumbs or flour, put them in a hot frying pan with oil, fry them well.
  4. Then put them in a saucepan, put them in the oven for 15-20 minutes so that they are well stewed at 180 C.
