Ingredients:

  • zucchini - 1 kg.
  • carrots - 300 g
  • onion - 300 g
  • garlic - 3 cloves
  • tomato paste - 70 g
  • vegetable oil - 70 g
  • sugar - 1 tbsp
  • salt - 1 tsp.
  • 9% vinegar - 1 tbsp
  • black pepper to taste
  • dried garlic and other spices as desired

Method of preparation:

1. Finely chop the onion and garlic.

2. Pour oil into a preheated pan with a thick bottom and add the onion and garlic.

3. Stir and fry for a few minutes over moderate heat.

4. Grate the carrots and add to the onions.

5. Stir and fry for another 3-5 minutes.

6. Peel the zucchini (if they are old and the seeds are coarse, remove them as well) and cut into cubes.

7. Add the tomato paste, stir and add the zucchini.

8. Add sugar, salt, pepper and spices.

9. Stir everything and simmer over low heat under a closed lid for about 30 minutes.

10. Stir occasionally to prevent burning.

11. Beat the caviar with a blender until smooth, put on medium heat, bring to a boil and cook for 3-4 minutes.

12. Add vinegar, stir again and turn off.
