What is the danger of potatoes
According to the nutritionist, the harmfulness of potatoes lies in the large amount of starch. The product is very high in calories, so its regular consumption can lead to excess weight. The content of useful vitamins and minerals is very low. This is compounded by the active excretion of fluids from the body, and a violation of water balance.
Unripe potatoes are especially dangerous – you can even get poisoned from them. This product contains solanine, a toxin that can cause abdominal pain, nausea, and vomiting. Therefore, you should never buy potatoes with even minimal green particles.
What can replace potatoes
Sweet potatoes
This is the closest vegetable to potatoes in taste. It is even called "sweet potato". It contains minimal starch, so it won't cause any harm. The texture of the sweet potato is very tender and mashed, with a sweetish taste.
Pumpkin
A vegetable that can become a component of absolutely any dish: salads, desserts, soups. It is a great garnish. It is especially delicious when baked. You can also preserve pumpkin or make juice from it. Pumpkin is well absorbed by the body. But be sure to pay attention to the ripeness of the pumpkin. It can be determined by the dry tail.
Carrots
Carrot juice is especially useful. You can also add this vegetable to salads in raw, boiled, baked, and fried form.

Recipe for carrot pancakes
Ingredients:
- Carrots - 400 g
- Eggs - 1-2 pcs.
- Onion - 1 pc.
- Flour - 1-2 tbsp.
- Salt, pepper - to taste
- Oil - for frying
- Sour cream - to taste
Method of preparation:
- Peel the carrots, and chop them on a coarse grater.
- Chop the onion on a medium grater.
- Add to the carrots along with the egg, flour, and spices.
- Mix everything.
- Spoon the carrot pancakes onto a preheated frying pan with oil.
- Serve with sour cream.
