The best way to salt red fish: a recipe from Volodymyr Yaroslavskyi
Fish is a very valuable, tasty, and healthy product that contains a lot of vitamin D, minerals, and most importantly, omega-3 fatty acids. It is worth noting that fish is one of the most important sources of highly saturated protein. It can be cooked in a variety of ways: baked, salted, fried, stewed, boiled.
Culinary expert and MasterChef judge Volodymyr Yaroslavskyi shared a recipe on Instagram that will help you to salt red fish deliciously, with minimal effort (to watch the video, scroll to the end of the page).
Ingredients:
- Fish - 1.2 kg
- Sea salt - 2 tbsp.
- Black pepper - a pinch
- Olive oil - 1 tbsp.
- Lemon zest - 1 tbsp.
- Sugar - 1 tbsp.
- Whiskey or Brandy/Gin - 2 tbsp.
- Spices - to taste
Method of preparation:
1. Peel the fish from the skin and remove the bones.
2. Mix sugar and salt, and sprinkle well on both sides of the fish.
3. Grate the lime zest.
4. Drizzle the fish with olive oil, grate the zest, sprinkle with pepper, and pour over the alcohol.
5. You can add thyme and rosemary, as well as any herbs to taste.
6. Cover with plastic wrap and refrigerate overnight.
7. Afterwards, take out the cooked fish and wipe it well with a towel to remove all the excess salt.
8. Wrap the fish in foil and let it stand for several hours.
"You can store salted fish for 7 days in the refrigerator, well wrapped in plastic wrap or in a tight container, and you can freeze salted fish from fresh fish," the chef said.
