Tastier than meat: eggplant with cheese and tomatoes in French
If you want a hearty and tasty dish, but at the same time, to be light, use eggplant, for example, as a base, which goes perfectly with cheese and vegetables.
The cook shared a recipe for delicious baked eggplant with cheese, tomatoes, and mayonnaise on Instagram.
Ingredients:
- eggplant – 2-3 pcs
- tomatoes – 2-3 pcs
- cheese – 200 g
- mayonnaise – 70-100 g
- olive oil (can be ordinary) – 3-5 tbsp
- garlic – 3 cloves
- salt to taste
- ground black pepper – 1/2 tsp
- suneli hops or Provencal herbs – 1 tbsp
Method of preparation:
1️ Add the chopped garlic, suneli hops, or Provencal herbs and ground black pepper to the olive oil and mix well.
2️. Wash the eggplant, and cut it into slices 5-6 mm thick.
3. Transfer the parchment and brush each eggplant slice with the dressing. Then add salt to taste.
4. Put the tomatoes and cheese on the eggplant, sliced in half rings. Make a grid of mayonnaise on top (adjust the amount).
5. Put the eggplant in a preheated 180-degree oven for 20 minutes.
