One of the most delicious, lightest, and most flavorful desserts that everyone loves is the Honey cake. In the summer, this dessert can be prepared in a new way, for example, by adding sour berries, which will regulate the taste of the sweet dessert.

Delicious Honey cake with currants

Culinary expert Yevhen Klopotenko shared a recipe for a summer Honey cake with currants and delicate cream on his website.

Homemade honey cake

Ingredients:

For the cakes:

  • flour - 450 g
  • honey - 3 tbsp.

  • sugar - 100 g
  • butter - 100 g
  • eggs - 3 pcs.

  • salt - 1/3 tsp.
  • baking soda - 1 tsp.

For the cream:

  • sour cream - 700 g
  • cream - 200 ml

  • powdered sugar - 150 g
  • currants - 100 g
  • mint - for decoration

Method of preparation:

1. Cake cream: wrap the cheesecloth in 2 layers and place it on top of a colander. Place a bowl underneath. Put sour cream in a colander with cheesecloth and leave it for 4-6 hours to get rid of excess liquid.

2. Beat eggs with salt and baking soda.

3. Put a bowl on a steam bath and put the honey, add salt, butter, and sugar, and stir until the butter melts and the mixture becomes smooth.

4. Add the egg mixture to the bowl on the steam bath and stir with a whisk to create a slight foam. Stir the mixture on the steam bath for 5 minutes.

5. Remove the bowl from the steam bath and add the flour, mix and knead the dough until smooth. Cover the dough with cling film and refrigerate for 1.5 hours.

6. Divide the dough into 8 equal pieces. Roll out each piece into a thin layer about 2 mm thick. Use a special cutter to cut out rectangles from the dough.

7. Transfer to a baking sheet and bake for 6-7 minutes each at 180 C.

8. Cream: pour the cream into a bowl and whisk until stiff peaks form, put the sour cream from the cheesecloth into another bowl and whisk it with 150 g of powdered sugar.

9. Assemble the cake: grease the mold on which you will form the cake with a little cream and put the first cake on top, grease it on top as well. Then put the cakes on top of each other, greasing each layer with sour cream and cream cream. You also need to grease the sides of the cake and the last layer on top.

10. Put the cake in the refrigerator overnight to soak it well, then garnish with currants!
