Successful moist sponge cake with three ingredients: never falls or crumbles
A tall, fluffy, and soft sponge cake is every housewife's dream. Traditionally, it is made with eggs, flour and sugar. The most important thing here is to beat the eggs well and combine all the ingredients evenly. And also to cool the sponge cake properly. Following the recommendations, the sponge cake will be moist and will not crumble when cut.
Food blogger Juliia Vilich (julia_vilich_food_blog) shared a recipe for a successful sponge cake, which requires only three main ingredients on her Instagram page,
Ingredients:
- eggs – 5 pcs.
- sugar – 140 g
- flour – 140 g
- baking powder – 1 tsp. (optional)
Method of preparation:
1. Beat eggs at room temperature with sugar. It takes about 7-10 minutes for the mass to become light and fluffy.
2. Add the flour in two stages. Knead the dough with a spatula clockwise from the bottom to the top until the flour is incorporated into the dough.
3. Pour the finished batter immediately into a parchment-lined baking dish. Bake in a preheated oven at 175 degrees for 35-40 minutes.
4. Let the finished sponge cake cool in the open oven for 10-15 minutes. Then carefully remove it from the mold and place it on a wire rack. After that, wrap the sponge cake in cling film and put it in the refrigerator for at least 5 hours. This time will be enough for all the moisture to be distributed evenly over the sponge cake. This way, it will be easy to cut and won't crumble.
