Ingredients:

  • eggs – 5 pcs.
  • sugar – 140 g
  • flour (for the chocolate version, replace 30 g of flour with cocoa) – 140 g
  • baking powder – 1 tsp (optional)

Method of preparation:

1. Beat eggs at room temperature with sugar for 7-10 minutes until light and fluffy.

2. Add the flour in two steps. Knead clockwise with a spatula from the bottom to the top to mix all the flour.

3. Immediately place the dough in a parchment-lined baking dish. Bake in a preheated oven at 175 degrees for 35-40 minutes. Check the readiness with a wooden skewer. If it comes out dry, the sponge cake is ready.

4. Cool slightly in an open oven, for about 10-15 minutes.

5. Next, take the sponge cake out of the mold, and if you have a small depression or a slide, it's normal.

7. Before wrapping the sponge cake in cling film, it must cool completely at room temperature. Otherwise, the center will "steam".
