Sponge cake sweet hedgehogs in coconut flakes: a dessert from childhood

Instead of a variety of cakes, make these simple cakes for tea. Many people associate their taste with childhood. They are based on ordinary sponge cake dough and coconut flakes.

The idea of making sponge cake sweet hedgehogs was published on the Instagram page of a food blogger with the nickname hotuyte_ta_smakuyte. The dessert is as simple as possible.

Ingredients for the dough:

  • egg - 1 pc.
  • sugar - 100 g
  • vanilla sugar - 1 pack
  • honey - 3 tbsp
  • sour cream - 200 g
  • butter - 100 g
  • flour - 300 g
  • baking powder - 2 tsp.

Ingredients for the fondant:

  • milk - 150 ml.
  • sugar - 150 g
  • butter - 150 g
  • cocoa - 3 tbsp.

For decorating:

  • waffles
  • coconut flakes

Method of preparation:

1. Mix the egg, sugar and honey.

2. Add sour cream and melted butter (not hot).

3. Mix until smooth and add the flour, baking powder and vanilla sugar.

4. Stir the sticky dough with a spoon until smooth.

5. Bake at 160 degrees for 35-40 minutes.

6. Cool and cut into cubes.

7. For the fondant, mix all the ingredients and bring to a boil. Boil for 2-3 minutes. Cool to a barely warm state.

8. Grind the waffles. You can use regular waffle cakes without filling, or sweet ones.

9. Dip each piece of cake in chocolate fondant and roll in waffle crumbs or coconut.
