Spicy salad with fried eggplants: how to season deliciously

Eggplant is a great choice for a savory summer salad. They are perfectly combined with other seasonal vegetables and a light dressing. No mayonnaise or soy sauce.

The idea of making a spicy eggplant salad was published on the Instagram page of food blogger Olha Holovina (olha.holovina). To prevent the onions from becoming bitter, it is better to pickle them.

Ingredients:

  • sweet tomatoes - 5 medium
  • eggplant - 1 large or 2 smaller ones
  • onion - 1 large
  • marinade for onions - 50-60 ml of water + 25 ml of vinegar + 1/2 tsp of salt and the same sugar
  • corn starch or flour
  • salt, pepper - to taste
  • parsley / cilantro - to taste

Method of preparation:

1. Peel the eggplant and cut into large cubes.

2. Season with salt and set aside for 15 minutes.

3. Then blot with a napkin, removing excess moisture.

4. Add flour or starch and roll each cube in it.

5. Deep-fry or pan-fry on all sides until golden brown.

6. Cut the onion into half rings, add all the marinade ingredients and leave for at least 20 minutes to marinate.

7. Dice the tomato and place in a bowl.

8. Then drain the onion and add to the tomatoes.

9. Put the fried eggplant in the same bowl.

10. Add spices to taste.

11. You can add olive oil, but the salad is already juicy enough due to the tomatoes and onions.

12. Top with slices of cream cheese and sprinkle with herbs.
