Delicious eggplant with sauce
Ingredients:
- eggplants – 1.5 kg
- sweet pepper – 0,5 kg
- hot pepper – 2-3 pcs
- garlic – 100g
- tomato paste – 2-3 tbsp
- table vinegar 9% – 25g
- sugar – 80g
- salt – 25g
- oil – 50g
Method of preparation:
1. Cut the eggplants into rings, salt, cover them with water, and send them under the oppression.

2. Chop the sweet and hot peppers and garlic. Add tomato, sugar, salt, oil, vinegar, and mix.

3. Squeeze the eggplants well and fry on both sides.

4. Put the fried eggplants in clean jars, alternating with the vegetable filling, you can sprinkle with herbs.

5. Sterilize for 20 minutes. Close the jars well afterward and put them under a blanket until they cool completely!
