Spectacular Drunken Cherry sponge cake: how to prepare a popular dessert

Drunken Cherry is a popular sponge cake with lots of juicy berries and delicate cream. The most important thing with this dessert is to make a puffy dough so that it doesn't fall off after baking. For a perfect result, use the following technique.

The idea of making the Drunken Cherry cake was published on the Instagram page of food blogger Iryna with the nickname diali cooking. The sponge cake is made with vinegar.

Ingredients for the sponge cake:

  • eggs - 6 pcs.
  • sugar - 150 g.
  • flour - 170 g.
  • cocoa - 4 tbsp.
  • baking soda - 1 tsp.
  • vinegar - 1.5 tbsp.

Method of making the sponge cake:

1. Beat eggs with sugar until very fluffy.

2. Sift flour, baking powder, and cocoa and mix gently.

3. At the end, add baking soda quenched with vinegar, mix again and pour into the mold.

4. Bake the sponge cake at 170 degrees for 20-30 minutes until a match is dry.

5. Then cool, cut off the cap and remove the center.

Ingredients for the cream:

  • cocoa - 50 g
  • powdered sugar - 100 g
  • eggs - 4 pcs.
  • milk - 4 tbsp.
  • butter - 400 g

Method of preparation:

1. Put it all on the fire and, stirring constantly, cook until it boils.

2. Cool under cling film to room temperature.

3. Pour the cognac over the cherries and stir.

4. Beat the soft butter with a mixer, add cream, then cherries, and the center of the sponge cake and mix everything.

5. Spread on the bottom sponge cake, smooth out and cover with the sponge cake cap.

6. Let the dessert set and drizzle with chocolate.
