Sour cream cake in a new way: with cookies and coconut flakes

Sour cream cake is a dessert that almost every housewife in Ukraine knows about. For the classic version, you need to bake sponge cakes and spread them with sour cream cream. However, you can use a much simpler and more interesting option and make a cake based on cookies. Also, add coconut flakes.

The idea of making Bounty sour cream cake was published on the Instagram page of food blogger Alex (mil_alexx).

Ingredients for the base:

  • shortbread cookies - 370 g
  • butter - 150 g

Ingredients for the filling:

  • sour cream (15%) - 450 g
  • sugar - 50 g
  • salt - a pinch
  • eggs - 2 pcs
  • flour - 50 g
  • condensed milk - 150 g
  • coconut flakes - 100 g

Method of preparation:

1. Put the biscuits crushed into fine crumbs and melted butter in a plate. Mix into a homogeneous mass.

2. Pour 3/4 of the biscuits from the total mass into a parchment-lined baking dish.

3. Tamp the bottom firmly and make the sides. While preparing the base, put the mold in the refrigerator.

4. Break the eggs into a saucepan, add flour, sugar, a pinch of salt and mix. Add sour cream.

5. Put on medium heat and stir regularly until the sauce thickens. Remove from heat and let cool.

6. Add condensed milk and coconut flakes to the cooled cream and mix well. Pour over the base and smooth out.

7. Sprinkle with crumbs on top. Refrigerate for at least 1.5 hours and serve.
