Soup of the day: how to make broccoli cheese soup

Today we are sharing with you a recipe for cheese soup with broccoli. Light and creamy, with a delicate creamy cheese flavor – this soup is so delicious that it will not leave anyone indifferent. We recommend preparing a large pot at once and gathering friends at home for a soup party. Moreover, this dish is very easy to prepare.
- vegetable broth - 2 cups
- carrots - 2 pieces (small)
- broccoli - 1 piece (small)
- celery - 1 stalk
- onion - 1 pc.
- processed cheese - 250 g
- hard grated cheese - 200 g
- cream or milk - 2 cups
- butter - 100 g
- flour - 100 g
- salt, pepper - to taste

- Wash and peel the vegetables. Cut carrots into slices, celery into cubes, and broccoli into florets.
- Bring two liters of water to a boil in a large saucepan. Add the chopped vegetables, cover the pot with a lid, and cook for about five minutes.
- Drain the water, remove the vegetables from the pot, and set them aside for a while.
- In the same saucepan, fry the finely chopped onion in butter. Add the flour and fry, stirring constantly, until the mixture becomes homogeneous.
- Gradually add the broth and milk (or cream) to the pan. Cook until the mixture thickens (8-10 minutes).
- Add the boiled broccoli, carrots, and celery, and cook the soup until the vegetables are soft.
- Add the processed cheese and half of the grated cheese to the broth. Cook, stirring, until the cheese is completely melted.
- Sprinkle with grated cheese when serving.
