Today we are telling you about the most popular soup in Finland. Finns call it kalakeitto, which literally means fish soup. On the Internet, it is also called lohikeytto or "milk soup". The main feature of this "fish soup" is that it is prepared with the addition of milk or cream.

Kalakeitto Finnish soup
  • fresh trout or salmon fillet - 500 g
  • onion - 1 pc.
  • potatoes - 4-5 pcs.
  • carrots - 1 pc.
  • water - 2 liters
  • butter - 1 tbsp
  • cream - 1 cup
  • salt, pepper - to taste
  • bay leaf - 1 pc.
  • fresh dill - for serving
  1. Peel the fish from skin and bones, and cut it into cubes. Peel the potatoes, carrots, and onions, finely chop the onions, cut the potatoes into cubes, and cut the carrots into strips or slices.
  2. In a large saucepan, fry the onion in butter. When the onion becomes transparent, add the potatoes and carrots and cover with water. Bring to a boil over high heat, then reduce the heat and cook until the potatoes are tender.
  3. Add the diced fish and cook for 5-7 minutes until the fish is light. Add cream, salt, pepper, and bay leaf. Stir and cook for another 5-10 minutes.
