Soup of the day: chicken soup with homemade noodles

Cooking soups is easy. Yes, it can take some time, but the principle of cooking is usually very simple.

In our "Soup of the Day" section, FoodOboz editors share recipes for first courses that even a novice cook can easily prepare. Today we tell you how to make chicken soup with homemade noodles. Of course, you can buy noodles in the store, but we still advise you to take the trouble to make them yourself. First of all, it's delicious, and secondly, kneading the dough is a good meditation and a great workout for your hands.

For the soup:

  • potatoes - 3 pcs.
  • carrots - 1 pc.
  • onion - 1 pc.
  • celery - 1 stalk
  • chicken thighs - 2 pcs.
  • bay leaf - 1 pc.
  • herbs - to taste
  • salt, pepper - to taste

For the noodles:

  • flour - 100 g
  • egg - 1 pc
  • salt - a pinch
  • oil - 0.5 tsp.
  1. Wash the chicken, put it in a saucepan, cover with water, and bring to a boil. Reduce the heat, remove the foam, add salt and pepper, and leave to cook.
  2. While the broth is cooking, make the noodles. Sift the flour with a slide, and add salt. Make a depression in the center of the slide and beat an egg into it. First mix with a spoon, then start stirring with your hands. Knead for 5-10 minutes.
  3. When the dough is soft and elastic, wrap it in cling film and leave it in a warm place.
  4. Wash and peel the vegetables. Finely chop the onion and celery, medium dice the potatoes, and slice the carrots. Add to the pot with the vegetables.
  5. Roll out the dough as thinly as possible. Roll the dough into a roll and cut it into thin strips. The thickness is at your discretion.
  6. Add the bay leaf to the soup and dip the noodles. Cook, stirring constantly to prevent it from sticking together. After 2-3 minutes, turn off the heat, add finely chopped herbs, and leave for another 2 minutes under the lid to let the soup infuse.
