Soft and not stale for a long time: how to make dough for kifli
Kifli are the simplest homemade pastries. They are always made with a filling, and to keep them for a long time and not to become stale, the dough is advised to be made with sour cream.
Food blogger Julia Vilich with the nickname julia_vilich_food_blog shared a recipe for sour cream kifli on her Instagram page.
Ingredients:
- flour - 530 g
- sugar - 140 g
- baking powder - 8 g
- vanilla - 2 g
- butter - 200 g
- low-fat sour cream - 200 g
- eggs - 1 pc
- condensed milk (for the filling)
Method of preparation:
1. Sift the flour, vanilla, and baking powder. Add sugar and mix with a whisk.
2. Grate the cold butter on a grater, grind to a state of crumbs.
3. Add cold sour cream and egg. Knead the dough in a bowl, then continue kneading on a hard surface. However, you do not need to knead for a long time. Divide the dough into two parts, wrap each in cling film and put in the refrigerator for 1 hour.
4. Roll out the dough into a layer, cut out a circle. From the center, cut the circle into equal triangular parts.
5. Put the filling on the side and wrap the kifli. Place on a baking sheet covered with parchment.
6. Brush with egg and water. Bake at 180 degrees for 25 minutes.
