Seasonal Napoleon cake with strawberries: how to prepare the popular dessert at home

Ingredients for the cream:

  • milk - 1 liter
  • eggs - 6 pcs
  • sugar - 500 g
  • flour - 2 tbsp
  • juice and zest of 1 lemon
  • vanilla sugar - 10 g

How to make the cream:

1. Heat the milk to 30 degrees.

2. Beat the eggs with flour and sugar until white. Gradually add milk and stir well.

3. Return everything to the pot.

4. Start heating (brewing) the cream at the minimum power.

5. Add the juice and zest of one lemon, stirring constantly. Increase the heat every 5-7 minutes.

6. Heat the cream until bubbles appear: it will take about 20-25 minutes.

7. Remove the cream from the stove and cool.

Ingredients for the cakes:

  • flour - 700 g
  • butter - 250 g
  • eggs - 2 pcs
  • cold water - 4-8 tbsp
  • salt - 1 tsp

Method of cooking cakes:

1. Add soft butter to flour and grind it into crumbs with your hands.

2. Add eggs, salt, and water.

3. Remove lumps with a spoon (add more water if necessary).

4. Leave the dough in the refrigerator for 30 minutes.

5. Divide into pieces according to the number of cakes (approximately 12-13 pieces).

6. Roll out each piece into a thin layer and cut out a circle.

7. Prick each cake with a fork several times.

8. Put them in the oven at 200 degrees for 7-10 minutes together with the trimmings.

9. Use the baked trimmings to sprinkle the finished cake.

Assemble the cake:

1. Spread the cakes generously with cream. Every 3-4 cakes, you can press the cake a little to make the layers even. Put strawberries on each layer.

2. Put the trimmings in a bag and cover with a towel.

3. Use something heavy to crush them into crumbs.

4. Sprinkle the cake with them on all sides.
