Rhubarb pie: how to make the filling sweet and soft

Many people, when they see rhubarb in their gardens, simply throw it away. But in fact, such a primitive plant can be a great ingredient for many dishes. Rhubarb pie is especially delicious. The product becomes very soft, sweet, and with a pleasant sourness.

The idea of making a rhubarb pie was published on the Instagram page of food blogger Svitlana Levytska (lanas_diet).

Ingredients:

  • rhubarb - 200 g in peeled form (you can add more).
  • butter - 100 g (it should be completely soft)
  • eggs
  • sugar/substitute - 200 g
  • flour - 185 g
  • milk - 125 ml
  • cardamom seeds - 1 tsp
  • a pinch of coarse salt
  • baking powder - 1.5 tsp

Method of preparation:

1. Preheat the oven to 200 degrees.

2. Add sugar to the butter (leave a spoonful for sprinkling), mix with a mixer for 4 minutes.

3. Pour in the milk.

4. Grind the cardamom well in a mortar and pestle with salt.

5. Pour this mixture into the flour, add the baking powder, and mix.

6. Add the flour mixture to the butter, and mix with a mixer until smooth.

7. Put into a greased baking dish, smooth, and arrange the rhubarb on top.

8. Sprinkle with a little sugar.

9. Put the cake in the oven, and reduce the temperature to 175 degrees.

10. Time 10 minutes.

11. Reduce the temperature to 150 degrees and bake for 30 to 50 minutes.
