Red currant pie that the whole family will enjoy

The most popular dish made from red currant is steamed dumplings. But it can be used to make a delicious and tender pie.

Food blogger Yulia Senych shared on Instagram how to make a tender and delicious red currant pie. To make the taste even better, make meringue.

Ingredients for 26cm baking dish

  • eggs - 6 pcs
  • flour - 200 gr
  • soft butter - 200 gr
  • sugar - 180 gr
  • baking powder - 1 tsp
  • vanilla sugar - 2 packs
  • powdered sugar - 150 g

Ingredients for the filling

  • butternut squash - 400 g

Method of preparation

1. Combine soft butter with sugar and vanilla sugar. Mix well.

2. Separate 4 eggs into whites and yolks. Add 2 whole eggs and 4 yolks to the dough. Leave the whites in the refrigerator for meringue.

3. Sift flour and baking powder into the dough and mix.

4. Put the dough into a mold greased with butter or oil.

5. Put half of the total weight of currants on top of the dough. Bake at 180 degrees for 30-40 minutes.

6. For the meringue, beat the chilled whites with a mixer with the addition of powdered sugar until sharp peaks (about 5 minutes).

7. Take the cake out of the oven and put the rest of the currants and whipped whites on top.

8. Put the cake back in the oven for about 30 minutes but at a temperature of 120 degrees.
