Red currant jelly without thickeners for winter
Currant is a very valuable and healthy berry that contains a lot of vitamins and essential minerals, especially vitamin C. Experts recommend eating it raw, and it makes delicious jam, as well as an ideal filling for pies and fruit ice cream.
Culinary expert Yevhen Klopotenko shared a recipe for a delicious currant jelly, which takes only 15 minutes to prepare, on his website.
Ingredients:
- red currants - 2 kg
- sugar - depending on the amount
- water - 1 glass
Method of preparation:
1. Wash the berries thoroughly.
2. Put them in a heavy-bottomed saucepan and pour in a glass of water. The amount of water may vary slightly: if the berries are hard and firm, then pour in a glass, if they are softer, then 1/2 cup will be enough.
3. Boil the berries with water over low heat for about 5 minutes, stirring constantly, until they are soft and begin to burst.
4. Put the berries in cheesecloth, rolling them in three layers. Press the berries well in the cheesecloth and squeeze the juice into a bowl.
5. Pour the juice into a saucepan, add sugar and bring to a boil. Then cook for another 5 minutes to thicken the mixture. Be sure to skim off the foam.
6. Pour the hot jelly into sterilized jars and close with the lids. Do not turn them over.
