Pumpkin juice with pulp: a natural homemade drink for winter
Pumpkin juice looks and tastes somewhat like the so-called nectar that you can often find on store shelves. The difference between the drinks is that homemade juice is of high quality, all-natural and healthy. Pumpkin juice is ideal to prepare for the winter.
Chef Serhiy Pokanevych shared a recipe for pumpkin juice that takes only 30 minutes to prepare on his Instagram page.
Ingredients (for 2 liters of finished juice):
- pumpkin (peeled) - 800 g
- water - 1 liter
- lemon - 1 pc
- citric acid - 5 g
- sugar - 100 g
- ginger (root) - 15 g
Method of preparation:
1. First, you need to prepare the pumpkin, namely peel it, remove seeds, and then cut it into cubes.
2. Pour the pumpkin into a saucepan, cover with water and put on the fire. During the cooking process, you will need to skim off the foam.
3. Meanwhile, zest the lemon and cut it into thin strips.
4. When the foam stops appearing, add lemon zest, citric acid and sugar to the pumpkin. Stir to combine. In general, you will need to cook the juice for 20 minutes from the moment the pumpkin boils.
5. Add the chopped ginger 5 minutes before cooking.
6. When the mass is cooked, whip it with an immersion blender.
7. Pour into jars and close with lids.
