Puffy steamed varenyky with cherries in 10 minutes
To make steamed varenyky fluffy and light, the dough is best prepared with warm kefir, and be sure to add baking powder or baking soda to flour.

Ingredients:
- 1 egg yolk
- 200 ml of 2.5% warm kefir
- 320 g of flour
- 1 tsp. baking soda
- 1/2 tsp of salt
- 1 tbsp. sugar
- cherries or sweet cherries, 1.5 tbsp sugar and 1/2 tbsp starch
- 50-100 g of butter for lubrication
Method of preparation:
1. Combine warm kefir and egg yolk. Separately, combine flour, salt, baking soda, and sugar and mix the wet and dry ingredients together. Knead a soft dough. It may be a little sticky. Cover with cling film and leave for 30-40 minutes.
2. Remove cherry pits. Mix cherries with sugar and starch.
3. Roll out the dough not too thin. It should be 3 mm thick. Cut out circles and fill them with 1 tsp of sugar and starch and 2 cherries. Pinch well.
4. For the steam bath, take a large saucepan, a transparent lid, a string and cheesecloth folded in four or muslin. Pour 2 liters of water and bring to a boil. Put 4-5 dumplings on top so that there is a distance between them, otherwise they will stick together. Steam the dumplings under the lid for exactly 6 minutes.
5. Remove from the steam bath, brush well with butter and serve immediately!
