Potato pancakes that don't darken: what to add to the dough
The simplest, tastiest, and most satisfying potato dish is potato pancakes. They should be made from yellow potato varieties - those that are more flavorful and boil better. And to prevent the potato pancakes from being gray and bruised, you need to add only sifted flour, and onion juice and sour cream to the base, which will prevent the potatoes from darkening.
Chef Volodymyr Yaroslavsky shared a recipe on Instagram for delicious potato pancakes with sour cream that won't be gray and full of flour.
Cook's tip: be sure to add sour cream and onions to the dough, they will prevent the potatoes from darkening!
Ingredients:
- potatoes - 480 g
- onion - 90 g
- eggs - 1 pc.
- sour cream - 60 g
- flour - 50 g
- salt to taste
- oil for frying
Method of preparation:
1. Grate the potatoes on a fine grater. Blend the onion in a blender.
2. Put the potatoes in a bowl, add the flour, onion, egg, sour cream, salt and mix well.
3. Heat the oil in a frying pan, put the potatoes in a spoonful, fry on both sides until tender.
Serve the potato pancakes hot with sour cream and sprinkle with herbs.
