Pies that always stay soft: life hacks for cooking

Pies are a dish that is always associated with family warmth and comfort. And it seems that making them is a special ritual. This is true because to make the texture perfect, you need to know a few useful life hacks. Then the pies will remain fluffy and fragrant for a long time.

The idea of making delicious fried pies was published on the Instagram page of a food blogger with the nickname mery_cakes4.

Ingredients:

  • milk – 100 ml
  • water – 150 ml
  • yeast – 7g
  • sugar – 20g (1 tbsp without a slide)
  • salt – 2/3 tsp
  • oil – 2 tbsp
  • flour – 380-400g

Method of preparation:

1. Add sugar and 100 ml of warm water to the yeast, mix, cover with a towel, and leave for 10-15 minutes to activate the yeast.

2. Sift 380 g of flour into a mixing bowl, make a well in the middle, and add salt, oil, warm milk, and activated yeast.

3. Mix everything well; if necessary, you can add more flour. But not too much. The dough should be very soft, tender, elastic, and slightly sticky to the hands.

4. Lightly grease a bowl with vegetable oil, cover the dough with cling film, and leave it in a warm place to double in volume.

5. Knead the dough well with your hands, shape it with the seam down, and leave it in a warm place under the plastic wrap again to double in size.

6. Now the dough is ready, and you can work with it by lightly oiling the work surface and hands. This portion of dough makes 16 pies. You can choose any filling: cabbage, potatoes and mushrooms, egg with green onions, rice with egg and herbs, jam.

7. Fry the pies in heated vegetable oil until golden brown on both sides.

8. Place on a disposable paper towel to catch any remaining oil.

9. To keep the patties soft, put them in a bag and seal it tightly.

10. If you don't have milk, you can replace it with water or potato broth.
