Pickled bean salad for winter: how to prepare the product deliciously

Despite the great benefits of beans, this product is somewhat specific because it takes a long time to cook. The taste is somewhat reminiscent of meat or some kind of porridge. This legume goes well with a variety of ingredients in a salad. It can even be prepared for the winter.

The idea of making bean salad for the winter was published on the Instagram page of food blogger Valeria (gulegavaleria).

Ingredients:

  • tomatoes - 4 kg
  • peppers, carrots, onions - 1 kg
  • beans and oil - 500 g each
  • sugar - 4 tsp
  • vinegar, spices - 8 tbsp

Method of preparation:

1. Boil fresh beans without salt; if you use dried beans, soak them in cold water for 5-6 hours.

2. Drain the water, cover the beans with fresh water and cook them until they are half cooked.

3. Cut pepper and onion into rings and grate tomatoes and carrots.

4. Mix the vegetables with the beans, salt and add 4 tsp of sugar. Then leave the mixture in a cold place for 6 hours.

5. Drain the juice that has formed. Pour oil over the vegetables, add peppercorns, bay leaf and any spices to taste. Simmer for 30-40 minutes.

6. Add 8 tbsp of vinegar at the end. Pour into jars and close.
