Perfect for tea or coffee: how to make fluffy cottage cheese cakes

When you need to quickly prepare something delicious for tea, cottage cheese cakes or vatrushky always come to mind. These cakes are fluffy and very convenient to take with you for a snack. Instead of the classic yeast dough, it would be better to make cottage cheese one.

The idea of making cottage cheese vatrushky was published on the Instagram page of food blogger Anastasia with the nickname healthydemure. It's also much easier.

Ingredients for the dough:

  • 9% cottage cheese - 200 g
  • egg - 1 pc
  • flour - 100 g
  • honey - 2 tsp
  • baking powder - 1/2 tsp.

Method of preparation:

1. Mix all the ingredients well.

2. If desired, you can additionally beat with a mixer.

3. Divide the dough into 2 parts.

4. Roll into balls and shape into cakes, making a depression for the filling in the middle.

Ingredients for the filling:

  • 9% cottage cheese - 150 g
  • egg - 1 pc
  • honey - 2 tsp
  • a pinch of vanilla

Method of preparation:

1. Mix all the ingredients well with a spoon or beat with a blender.

2. Fill the base with the filling.

3. Bake at 180 degrees (convection mode) for 20-25 minutes.
