Pavlova air cakes with strawberries: how to make a popular dessert

Pavlova dessert is a very popular airy dessert made from delicate meringue. The most important thing in making this delicacy is to whip the whites properly so that the mass does not crumble after drying. Seasonal strawberries are ideal for the filling.

The idea of making Pavlova dessert was published on the Instagram page of food blogger Iryna Kharchyshyna (irisha_redko). You also need to make a delicious delicate cream.

Ingredients for meringue:

  • whites – 3 pcs.
  • powdered sugar – 100 g
  • corn starch – 1.5 tsp
  • lemon juice

For the filling:

  • strawberries – 100 g
  • sugar – to taste (2-3 tbsp)
  • starch – 2 tsp (dissolve in 100 ml of water)

Ingredients for the cream:

  • cream cheese – 150 g
  • Powdered sugar – 50 g
  • cream 33% – 100 ml.

Method of preparation:

1. Mix chopped strawberries, sugar, starch dissolved in water in a saucepan and cook for 3-5 minutes.

2. At the end, beat everything with a blender.

3. Cover with cling film in contact and leave to cool.

4. For the cream, beat the cream cheese, powdered sugar and cream with a mixer. Just a few minutes until stiff peaks form.

5. For the meringue, mix the egg whites with the powdered sugar, put in a water bath to dissolve the powdered sugar completely.

6. Beat until peaky, add a little lemon juice and starch at the end.

7. Beat with a whisk for another minute.

8. Transfer to a pastry bag and place the base on the parchment.

9. Dry at 80 degrees for 2-2.30 hours.

10. Assemble the dessert: put strawberry confit on the base, cover with cream, put strawberries in slices or whole. Sprinkle with pistachios if desired.
