Pancakes that always turn out thin and don't tear: on choux pastry

Perfect pancakes are thin, delicate, and golden. And if cooking such a dish is problematic for you, you should use the next option. The dough here is choux, so it won't tear. And kefir will make the mass elastic.

The idea of making custard pancakes with kefir was published on the Instagram page of food blogger Nadia Oranska (nadia.oranska).

Ingredients:

  • 400 ml of buttermilk
  • 250 ml of water (boiling water)
  • 2 eggs
  • 250 g of flour
  • 2 tbsp of vegetable oil
  • 3 tbsp of sugar
  • 0.5 tsp of baking soda
  • a pinch of salt

Method of preparation:

1. Beat eggs with sugar and salt. Add kefir, sifted flour and beat with a whisk.

2. Boil water, stir in baking soda, pour a thin stream into the dough, mixing well.

3. If the dough is not thin enough, add a little more warm water.

4. Pour 1 tbsp of vegetable oil into the dough and mix.

5. Leave to brew for 5-7 minutes.

6. Grease a preheated frying pan with vegetable oil, pour the batter with a ladle and fry the pancakes for 1 minute on each side.
