According to experts, pumpkin is the healthiest autumn vegetable. It contains a lot of vitamins and minerals that are so necessary, especially in the fall and winter.

People's Artist of Ukraine Olha Sumska shared a recipe for a delicious pumpkin soup with feta cheese on her Instagram stories, which is, firstly, quick to prepare, and secondly, hearty and very light at the same time.

Pumpkin soup

Ingredients:

  • pumpkin - 200 g
  • garlic - 2 cloves
  • onion - 1 pc.
  • milk - 100-150 ml
  • butter - 30-40 g
  • water - 100 ml
  • cheese - 100 g
  • ginger - 1 tbsp
  • pumpkin seeds - a handful

Method of preparation:

  1. Wash the pumpkin, be sure to peel it, and cut it into cubes.
  2. Peel and dice the onion, chop the garlic, and fry in a saucepan with butter.
  3. Add the pumpkin and stew well for 5 minutes under a closed lid.
  4. Then add milk and water, stir, and simmer for another 10-15 minutes.
  5. At the very end, add the cheese, and grated ginger, transfer everything to a blender, and whisk until smooth to make a liquid puree soup.

Serve the dish hot, and sprinkle with pumpkin seeds.
